THE CHEFS
Jacques Fallou is a French pastry chef, with
decades of experience and talent. Jacques was
literally born with “a hand for pastry”: As a small
child, whenever Jacques went missing, his parents
knew where to find him – over at the village bakery!
Jacques has cooked for many famous people,
including President Clinton, who wouldn’t leave
Australia without more of his chocolates!
Daniel Eggins is chef and co-owner of Cafe
Treahorne, as well as a part-time teacher of
commercial cookery at TAFE. He has had 19 years
experience in the industry and is passionate about
using as much local produce as possible and
supporting the Food Co-op. Daniel has acreage with
a thriving organic orchard, vegetable garden and free-
range chicken run, providing some of the produce for
Cafe Treahorne.
Greg Broome’s philosophy at Mountain
Harvest Cafe
and Dining Bar is to offer simple, fresh fare. He uses
Rhode Island Red eggs, double smoked bacon and
hand-tied sausages. Greg has a particular interest in
catering to celiacs and always offers a gluten –free
menu. Greg has been cooking for twenty years and
is particualrly proud of his desserts, all made on the
premises, using recipes he has worked with for a long
time. There’s even a gluten-free chocolate cake.
Greg buys local produce whenever he can , such as a
local goats’ cheese ,and offers a pure Australian
coffee.
WHY FOCUS ON OUR CAFES AND RESTAURANTS?
Our restaurants and cafes scattered throughout the
villages help give the Blue Mountains a special feel.
They are popular meeting places and important to
the culture and economy of our region. A number
display artwork by local artists and offer menus
borrowed from around the world. Organising
KITCHEN WORKSHOPS in some of these is a way
for Slow Food Blue Mountains to show support for our
cafes and restaurants.
Should you be interested in conducting a KITCHEN
WORKSHOP in
your business? Contact SFBM by phoning 47827376

| Jack Thompson et fils Garner the Gearin |
 |
|
Actor Jack Thompson, bush firie son Patrick, Peter
Sprowles and Chris Foster (mandatory name for pub
ownership) have bought the Gearin pub for around
$4extralarge.00.
Most of us know the Gearin, its on the highway
backing on to that second hand eyesore by the
overpass that leads to 'Bottleneck Roundabout'.
It would be great to see them all throw a few more
quid at it and bring it to a point that makes the
entrance into Katoomba a tad more attractive.
It is reported that Russell Crowe has put his hand up
to get the band up for a show or two in the back bar
and some of Jack's other celeb friends have been
invited up to bend the elbow. Its also reported that
Jack can't pour a beer and is going to have to be
slowly instructed in the art of drawing off a schooner
of Resch's instead of a schooner of ice cream.
'Onya Jack et al & welcome to Highway West.

| Jenolan’s Lost Cave Re-Opens After 74 Years |
 |
|
Jenolan Caves has re-opened its Nettle Cave after 74
years behind closed doors, introducing a
new digital audio tour that allows visitors to explore
on a self-guided basis for the first time.
The new Nettle Cave tour represents the first cave
opening at Jenolan since the Ribbon Cave in
1931 and offers the chance to see rare, prehistoric
life-forms known as stromatolites.
Together with the adjoining Devil’s Coach House, the
Nettle Cave has been incorporated into a trail
that can be followed using a digital handset
developed by Acoustiguide. The device allows
visitors

historical aspects in as much detail as they choose,
while exploring at their own pace.

| Who sez ya can't boil an egg? |
 |
|

The egg
that will tell you
when it's perfectly boiled
It could be an answer to the prayers of people who,
quite literally, cannot boil an egg, or at the very
least, a godsend for a new generation of students
struggling with the most basic of culinary tasks.
Revolutionary "self-timing" eggs designed to
overcome the perennial problem of how to avoid
runny whites and overcooked yolks will appear on
supermarket shelves in the coming months.

Springtime Health Tip |
|
|
|
Meat is Bad For You! Oh really!
You must grasp logistical efficiencies. What does a
cow eat? Hay and
corn. And what are these? Vegetables. So a steak is
nothing more than an
efficient mechanism of delivering vegetables to your
system. Need grain?
Eat chicken. Beef is also a good source of field grass
(green leafy
vegetable).
And a single pork chop can give you 100% of your
recommended daily allowance of
vegetable products. So remember
this Red meat is not
bad for you.
Furry green
meat is bad for you.
One Helluva Tribute Check
out the pictures below. The first 2 are a letter from
the word HOLDEN and the Holden crest. These pics
were taken at the top of Mt Panorama. The third pic
is of the safety wall with Holden advertising all the
way along it. Every single letter and crest were
written on in texta and whatever else Peter Brock's
fans could use to pay tribute to him. Click on the
pics for a larger view.
There is at least another 200
metres of
wall not shown in the pic.
Marijuana Legalized at Mt
Rankin Mt Rankin residents
took advantage of the new legalization and
gathered as a group to blow a few tokes.

 Darug elder Aunty Joan Cooper
O.A.M. Passed away peacefully at hospital,
October 24, 2006, with family by her side.
"Her smile, her strength, her thoughtfulness and her
wisdom will be remembered by all whom she has
touched. A true gentlewoman."
